He has been a big influence on understanding the recipes and the techniques. Kapoor often takes a traditional approach but he makes it accessible. He also provides a counterpoint to some of the idiosyncrasies in my grandmother’s books.
He is adept at demonstrating how to cook street vendor inspired food.
